Per compensare, uno degli ingredienti  è piuttosto inusuale in pasticceria: una piccola rapa rossa, o barbabietola se preferite. Cruda, visto che abbiamo la fortuna di  raccoglierle nell'orto o di trovarle nelle ceste dei mercati contadini.Non siamo certo i primi a mettere barbabietole in una torta.
